Cod in the maple syrup with dried apricot sauce

Ingredients

  1. Agama cod loin
    1 piece
  2. Maple syrup
    1 table spoon
  3. Dried apricot
    1-2 handfuls
  4. Cedar nuts
    1 handful
  5. Shallot
    1 bulb
  6. Green garlic
    2 cloves
  7. Green onion
    3-5 leaves
  8. Extra Virgin olive oil
    1 table spoon
  9. Dry white wine
    100 ml
  10. Butter
    1/2 tea spoon
  11. Chili flakes
    1 pinch
  12. Sea salt
    1 pinch


Directions:

Line a dripping pan with several layers of cooking foil so that to obtain a pocket, put the cod inside the pocket.

Pour maple syrup and soy sauce onto the fish, fasten the foil edges together.

Grill the fish, in 7-10 minutes open the pocket and bake the fish for a couple of minutes until golden brown. Peel the shallot and cut it into half rings.

Peel the garlic and finely chop it.

Cut dried apricots into small pieces. Slice green onion diagonally and thin.

Prepare the sauce: heat in a frying pan olive oil and butter, add onion, garlic, cedar nuts, dried apricots, stir and fry them.

When nuts become golden, add wine, season with salt, add chili pepper, make alcohol evaporate on a high heat, turn off the fire, add green onion and stir.

Put the cooked fish together with its juice onto a plate, add the sauce on the top.
